To make Chef Paolo Laboa's Truffle Mashed Potato Pancakes you'll need:

  • 2 cups cold mashed potatoes

  • 2 eggs, lightly beaten

  • 1 Tbsp flour

  • Pinch of salt

  • Dark chocolate chunks or Parmesan cheese (optional)

Directions:

  1. Mixed mashed potatoes, eggs, flour, salt, and any optional ingredients in a bowl.

  2. Preheat two tablespoons of oil in a skillet over medium-high heat.

  3. Make sure the mixture is not too thin.

  4. Pour 1/4 cup batter into the pan and cook until brown on both sides.
