With over two decades of culinary expertise and a deep appreciation for Maine’s vibrant food culture, Labonte delivers exceptional dining experiences that celebrate both tradition and creativity.

Chef Labonte earned his culinary arts degree from Johnson & Wales University in 1999 and began his career as a sous chef at the Key West Hilton Resort & Marina. His career flourished as he took on prominent roles, including Executive Chef at the Ocean Key Resort & Spa in Key West and Regional Executive Chef for Hart Hotels, overseeing premier properties such as Portland Harbor Hotel, Inn at Diamond Cove, and Diamond's Edge Restaurant. As Corporate Chef for Dennis Foodservice, Labonte developed his marketing expertise, crafting culinary solutions and fostering industry innovation.

Currently, as Executive Chef at Falmouth Country Club, Labonte leads with a commitment to excellence, creating menus that delight members and guests alike.

Labonte’s passion for travel has taken him across the globe—from Italy and Spain to South Africa and Greece—where he immerses himself in local cultures, cuisines, and breathtaking landscapes. His culinary style reflects these global influences, bringing international inspiration to the table.

When he’s not in the kitchen, Labonte channels his creativity through photography as the founder of My Left Eye Photography, an online print store and photography service. His eye for photogenic moments parallels his talent for crafting visually stunning and flavorful dishes.

Chef Labonte’s journey is a testament to his dedication, artistry, and love for connecting people through food and experiences, both in Maine and beyond.

Spring Wine Dinner with Chef Jef Wright

Join Executive Chef Wright and Sommelier Archer for a delicious wine dinner together at Falmouth Country Club on May 25, 2023. We’ll be basking in the bounty of Maine’s in-season spring harvests from land and sea, elevated to exquisite dishes by Chef Wright, while Erica entertains the perfect wine pairings from around the world for a truly delicious gastronomical experience.

Chef Jef Wight
Now leads the FCC new culinary program as Executive Chef, beginning mid-March. He is a graduate of Le Cordon Bleu Culinary Academy; he has worked in a wide array of cuisines and restaurants, both large and intimate. For many years he worked in Atlanta with Richard Blais, a former Top Chef winner, and focused on molecular gastronomy to reimagine and refine traditional southern dishes. His passion for continued learning has taken him to Philadelphia and New York, where he worked in a 2 Michelin-star restaurant and a large upscale restaurant group. His style is best described as influenced by traditional French and Southern cuisines with a love for reimagining classic dishes and always focusing on refined techniques. Jef was Executive Chef, leading the kitchen at Sur Lie, in Portland, and most recently at Crown Jewel on Great Diamond Island, as well as cooking and hosting virtual wine dinners with Sommelier Erica Archer of Wine Wise and Falmouth Country Club.
