FCC Executive Chef Owen Price began cooking professionally at the age of 20. He started cutting his teeth in Burlington, VT, then decided to make the move to Northern California where he worked with talented chefs in San Francisco and Sanoma County. While working in San Francisco he fell in love with Vietnamese cuisine. Before moving to Vietnam to immerse himself in the culture and train under a variety of local chefs, he worked for, James Beard awarded Marc Vetri in Philadelphia. Under the supervision of Chef Vetri, he honed his skills in the art of pasta-making and authentic Italian cuisine. In 2017 he finally made it to Portland, Maine, to put down some roots and began to work with some of our city’s best chefs, including Matt Ginn and Cara Stadler. Now he calls the kitchen Falmouth Country Club home.

Winter is seafood season in Maine and we can’t think of a better way to celebrate the season than by enjoying the freshest produce from the sea and delicious wine pairings alongside each and every course.

Executive Chef Owen Price is at the helm of the Falmouth Country Club kitchen and has invited has always loved Matt’s cooking style since he first moved to Maine. They worked together as consulting chefs to the team at Via Vecchia and had such a great time working together, and continued to stay in touch. He recently bought some of Chef Ginn’s foraged mushrooms and we both expressed interest in doing a tasting menu together … and here you have it!

Executive Chef Matt Ginn oversees menu creation and operations at Evo Kitchen + Bar, an upscale, modern eatery on Fore Street in Portland, and at Chebeague Island Inn, a 100-seat restaurant and historic hotel in Casco Bay off the coast of Yarmouth. Matt has been interested in food since his first job at 14, picking strawberries at Maxwell’s Farm in Cape Elizabeth. He was awarded the Lobster Chef of the Year in 2015, had the honor of cooking at the James Beard House in New York City in 2017, and was a two-time Chopped Champion on the Food Network. He and his wife are the proud parents of a six-year-old son, Bryce, and a three-year-old daughter, Claire.

At four different locations we'll sample a Bourbon, discuss their uniqueness, similarities, production processes, and regional influences through tasting and discussions that will build your knowledge of Bourbon. Then some of the city's most esteemed bartenders will teach you how to make a great balanced cocktail from that Bourbon and share a few cocktail-making tips and tricks that you'll love to have in your repertoire.

Archer is a true oenophile, having obtained high levels of certification in her field. In 2010, she was awarded the Wine Spirit and Education Trust Level Three Advanced Certification in Wines and Spirits (with merit), became a Sommelier in the American Court of Master Sommeliers, and received her Certified Wine Professional award from the Culinary Institute of America in St. Helena, California. Erica is the principal of Wine Wise, a wine education and events service and is skilled at creating truly creative and memorable wine experiences that take guests beyond a typical tasting with her intimate understanding of what makes each wine unique. And she’ll do it with her trademark down to earth style and sense of humor.

Where do we meet?
We'll send an email to attendees the Wednesday before the event announcing the starting location and all the establishments that we'll be visiting. Please arrive 5-10 minutes before our start time. Please refer to our FAQ page for answers to questions that you may be wondering about.

Cancellations/Reschedules/No Shows
Because of our size, cancellations affect us significantly. If we are able to re-sell your tickets we can refund your ticket price minus the $10.00 credit card transactions we have to pay OR reschedule you to a different date that has availability (there is no credit card transaction fee in this case). You are always welcome to send a friend or family member in your place or sell your own tickets. Just make sure we have the ticket holder's email address so we can send them the event notifications so they are aware of where to find us and any day-of weather related notifications. There are no refunds or reschedules for no shows or if we are not able to resell your tickets. Makes sense, right?
